Very tasty 'autumn' style main dish.
In large nonstick skillet over medium heat add Olive oil and 1 T butter, brown chops on both side, seasoning with salt and pepper and a bit of spice/herb mix from below. Remove chops from pan. Add remaining butter melt then add onions stir cooking for 2 minutes. Add apples and lemon juice and cook for 2 minutes mixing well with onions. Create 'wells' and return pork chops to pan cover and cook until chops are done and apples are tender but not mushy. Serve pork chops with apples and onions on top.
spice/herb mix: I crushed using my mortar & pestle approximately 1 Tbsp dried Thyme, 1 1/2-2 Tbsp dried Rosemary and 1/4-1/2 tsp poultry seasoning.
Note: This will make more than you need for this recipe, but is good with other things.
Boneless chops could be used for this, cooking time may need to be adjusted.
I used red delicious apples since that is what I had on hand.
